Golden Syrup Treacle Pudding Cake

Cake:

  • 1 cup dairy-free milk (room temp (I used soy))
  • 1 teaspoon vinegar (apple cider or white)
  • 1/2 cup golden syrup
  • 1/3 cup vegetable oil (or other mild oil)
  • 2 3/4 cups self-rising flour
  • 1/2 cup dairy-free yogurt (I used soy)
  • 1/2 cup light brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Glaze:

  • 2 tablespoons boiling water
  • 4 tablespoons golden syrup
  1. Preheat the oven to 340°F.
  2. Line and lightly grease a square baking dish (about 8 inches, but fill until 3/4 full to allow for rising).
  3. Mix together the milk and vinegar, and set aside for 10 minutes.
  4. Once thickened, pour into a large mixing bowl and add the remaining wet ingredients.
  5. Sift in the dry ingredients and gently mix until just combined.
  6. Pour the batter into the baking dish.
  7. Bake for 35-40 minutes, or until the center of the cake is set.
  8. When the cake has a few minutes left to bake, prepare the glaze by mixing the ingredients together.
  9. Once the cake is done, let it cool for 10 minutes, then poke holes in it.
  10. Pour the glaze over the top of the cake, spreading it to cover completely.
  11. Let the glaze set for about 20 minutes before serving.
