Golden Syrup Sponge Pudding Cake
Ingredients
Cake Ingredients:
- 1 cup dairy-free milk room temp (I used soy)
- 1 tsp vinegar apple cider or white
- 1/2 cup golden syrup
- 1/3 cup vegetable oil or other mild oil
- 2 3/4 cups self-raising flour
- 1/2 cup dairy-free yogurt I used soy
- 1/2 cup light brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
Glaze Ingredients:
- 2 tbsp boiling water
- 1/4 cup golden syrup
Instructions
- Preheat the oven to 340°F (170°C) with a fan.
- Line and lightly grease a square baking dish (about 8 inches, but fill until 3/4 full to allow for rising).
- Mix together the milk and vinegar, then set aside for 10 minutes to thicken.
- Once thickened, pour into a large mixing bowl and add the remaining wet ingredients.
- Sift in the dry ingredients.
- Gently mix until just combined.
- Pour the batter into the prepared baking dish.
- Bake for 35-40 minutes, or until the center of the cake is set.
- When the cake has only a few minutes left to bake, prepare the glaze by mixing the ingredients together.
- When the cake is done, leave it to cool for 10 minutes, then poke holes in the top.
- Pour the glaze over the cake, spreading it to cover completely.
- Let the glaze set for about 20 minutes before serving.
