Gluten Free Snickers Cookies
Ingredients
Cookie:
- 1 3/4 cup almond flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/3 cup almond butter
- 1/3 cup pure maple syrup
- 1 egg or chia egg 1 tbsp chia seeds mixed with 3 tbsp water, let sit for 10 minutes
- 1 tsp vanilla extract
“Caramel”:
- 1/2 cup creamy almond butter
- 1/3 cup pure maple syrup
- 1 tsp vanilla extract
Toppings:
- 1/3 cup roasted peanuts chopped
- 1/2 cup non-dairy chocolate chips
- 1/2 tbsp coconut oil for melting chocolate
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix together almond butter, maple syrup, and vanilla extract.
- Add almond flour, baking powder, and salt. Mix until a thick dough forms.
- Use a double cookie scoop to form dough balls. Flatten slightly with your palm.
- Make an indent in the center of each cookie with the back of a spoon.
- Bake for 15 minutes, then let cookies cool completely.
- Prepare the healthier caramel by mixing almond butter, maple syrup, and vanilla extract. Spread onto cooled cookies.
- Sprinkle chopped roasted peanuts on each cookie and drizzle with melted chocolate.
- Allow the chocolate to firm up before serving and enjoy!
Notes
- If the dough is sticky, coat your palm with a little oil for easier handling.
- Ensure the indentation in the cookies is deep enough for the caramel.
- Let the cookies cool completely before adding the caramel.
- You can melt the chocolate in the microwave with a touch of oil in 30-second increments.
