Gluten Free Snickers Cookies

Ingredients

Cookie:

  • 1 3/4 cup almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup almond butter
  • 1/3 cup pure maple syrup
  • 1 egg or chia egg 1 tbsp chia seeds mixed with 3 tbsp water, let sit for 10 minutes
  • 1 tsp vanilla extract

“Caramel”:

  • 1/2 cup creamy almond butter
  • 1/3 cup pure maple syrup
  • 1 tsp vanilla extract

Toppings:

  • 1/3 cup roasted peanuts chopped
  • 1/2 cup non-dairy chocolate chips
  • 1/2 tbsp coconut oil for melting chocolate

Instructions

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • In a large bowl, mix together almond butter, maple syrup, and vanilla extract.
  • Add almond flour, baking powder, and salt. Mix until a thick dough forms.
  • Use a double cookie scoop to form dough balls. Flatten slightly with your palm.
  • Make an indent in the center of each cookie with the back of a spoon.
  • Bake for 15 minutes, then let cookies cool completely.
  • Prepare the healthier caramel by mixing almond butter, maple syrup, and vanilla extract. Spread onto cooled cookies.
  • Sprinkle chopped roasted peanuts on each cookie and drizzle with melted chocolate.
  • Allow the chocolate to firm up before serving and enjoy!

Notes

  • If the dough is sticky, coat your palm with a little oil for easier handling.
  • Ensure the indentation in the cookies is deep enough for the caramel.
  • Let the cookies cool completely before adding the caramel.
  • You can melt the chocolate in the microwave with a touch of oil in 30-second increments.
