Ingredients

Scale
  • 2 cups gluten-free flour blend (such as Bob’s Red Mill)
  • 1/3 cup organic white sugar (or brown/coconut sugar)
  • 1/2 Tbsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp apple pie spice
  • 3 Tbsp ground flax
  • 1 1/3 cups room temperature apple cider
  • 1/3 cup applesauce (or 2 eggs)
  • 1/4 cup melted and cooled coconut oil
  • 1 tsp vanilla extract

Cinnamon + Sugar Coating:

  • 1/2 cup white sugar
  • 1 tsp cinnamon
  • 1/4 tsp apple pie spice


Instructions

  1. Preheat oven to 375°F and grease a donut pan with non-stick spray.
  2. In a medium bowl, combine gluten-free flour blend, sugar, baking powder, salt, cinnamon, nutmeg, ground flax, and apple pie spice.
  3. In another bowl, whisk together room temperature apple cider, eggs/applesauce, melted coconut oil, and vanilla extract.
  4. Add dry ingredients to wet and mix until just combined. Let the mixture rest for 3 minutes.
  5. Pour batter into the greased donut pan using a cookie scoop or piping bag, filling cavities to the top.
  6. Bake for 12-15 minutes until golden brown. Allow donuts to cool for 5 minutes before removing from the pan.
  7. While cooling, mix sugar, cinnamon, and apple pie spice in a small bowl.
  8. Lightly coat donuts with oil spray and dip each side in the cinnamon-sugar mixture.
