Cinnamon Cookie Dough

Streusel Topping

  • 1/4 cup brown sugar
  • 1/31/2 cup all-purpose flour
  • 1/2 tsp cinnamon
  • Pinch of salt

Vanilla Icing

  • 1/2 cup powdered sugar
  • 1 tbsp milk
  • Splash of vanilla extract


Instructions

1. Make the Dough

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

  • In a large bowl, cream together butter, oil, and brown sugar until smooth and fluffy.

  • Add egg and vanilla, mixing until fully incorporated.

  • Stir in cinnamon, baking soda, baking powder, salt, and flour. Mix just until combined. Do not overmix.

2. Prepare the Streusel

  • In a separate bowl, mix butter, brown sugar, flour, cinnamon, and salt.

  • Blend until a crumbly mixture forms that holds together when pressed.

3. Shape the Cookies

  • Scoop dough onto prepared baking sheets, spacing evenly.

  • Press a small indentation into the center of each cookie.

  • Fill each indent with streusel topping.

4. Bake

  • Bake for 10–12 minutes, until edges are lightly golden and centers remain soft.

  • Let cookies cool slightly on the pan.

5. Add the Icing

 

  • Whisk powdered sugar, milk, and vanilla until smooth.

  • Drizzle icing over slightly cooled cookies before serving.
