- Heat things up
- Set your oven to 350°F (175°C). Line an 8×8-inch square pan with parchment paper, making sure you leave some extra hanging over the edges—this will help lift the bars out later.
- Build the base
- In a medium bowl, whisk together the flour, oats, brown sugar, salt, and baking powder.
- Add the richness
- In a separate bowl, stir the melted butter with the vanilla until smooth.
- Bring it all together
- Pour the buttery mixture into the dry ingredients. Stir until you’ve got a crumbly dough.
- Press and save
- Take about two-thirds of this dough and press it firmly into the bottom of your pan to form a solid crust. Hold onto the rest—it’ll be your topping.
- Mix the berry filling
- In another bowl, gently toss the blackberries with the white sugar and lemon juice until coated and glistening.
- Layer the goodness
- Spread the blackberry mixture evenly across the crust.
- Top it off
- Sprinkle the reserved dough over the berries, then scatter the pistachios across the top for a nutty crunch.
- Bake to perfection
- Slide the pan into the oven and bake for 30–35 minutes, or until the topping is golden brown and the filling is bubbling up at the edges.
- Cool down
- Let the bars rest in the pan for at least 1 hour. Once cooled, lift them out using the parchment handles and cut into neat squares.
- Finish with flair
- For an elegant touch, dust lightly with powdered sugar just before serving.
