Description
Creamy, crunchy, and ready in minutes, this Greek Yogurt Bark layers peanut-butter-swirled yogurt under a glossy chocolate top for a frozen snack that tastes like a healthier Reese’s. It’s high in protein, easy to customize, and perfect straight from the freezer when a sweet-and-salty craving hits.
Ingredients
- 1 cup plain whole-milk Greek yogurt
- 3/4 cup creamy peanut butter
- 1/4 cup vanilla protein powder
- 1–2 tablespoons maple syrup or honey (to taste)
- 1/4 teaspoon vanilla extract
- 1 cup dark chocolate chips
- Flaky sea salt, for finishing (optional)
Instructions
-
In a mixing bowl, whisk the Greek yogurt, peanut butter, protein powder, maple syrup (or honey), and vanilla until the mixture is smooth and thick. Aim for a spreadable consistency—no lumps.
-
Line a quarter-sheet pan (or a similarly sized tray) with parchment paper. Scrape the yogurt mixture onto the paper and spread it evenly with an offset spatula or the back of a spoon. Make the layer about 1/4″–1/2″ thick depending on whether you want crispier shards or chunkier pieces.
-
Melt the chocolate chips in the microwave in 30-second bursts, stirring each time, until silky and pourable. Be careful not to overheat.
-
Pour or spoon the melted chocolate over the yogurt layer and smooth it into an even coating. Add any extras (pretzel bits, chopped peanuts, or mini chips) while the chocolate is still soft.
-
Freeze the pan until the bark is completely firm, at least 2–3 hours.
-
Remove from the freezer, sprinkle with flaky sea salt if desired, then cut with a sharp knife or break into irregular pieces by hand. Serve immediately or store in the freezer.
Notes
- Quick tips & storage
- Use full-fat Greek yogurt for a creamy, non-icy texture; low-fat versions tend to freeze harder.
- Let pieces sit at room temperature for 3–5 minutes before eating for a softer bite.
- Store the bark in an airtight container in the freezer with parchment between layers to prevent sticking. It keeps well for up to 3 months.
- Want cleaner bars? Score the chocolate before freezing fully, then slice after it’s solid.
