*For the cookie bars:*

  • 3/4 cup 12 tbsp melted salted butter
  • 1 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1 tbsp vanilla extract
  • 2 eggs (at room temperature)
  • 2 cups all-purpose flour
  • 1 tbsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips (milk chocolate or semi-sweet)
  • 1/2 cup rainbow sprinkles (confetti quins or traditional jimmies)

*For the frosting:*

  • 3/4 cup room temperature salted butter
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 3-5 tbsp heavy cream
  • 1/2 tsp salt
  • Optional: gel food coloring
  • Additional sprinkles for decorating


Instructions

*For the cookie bars:*

  1. Preheat your oven to 350°F. Grease and line a 9×13 metal pan with parchment paper.
  2. In a stand mixer bowl, combine melted butter, brown sugar, and granulated sugar. Mix until well combined. Add vanilla and eggs, mixing until incorporated.
  3. With the mixer on low, add in flour, salt, cornstarch, and baking soda. Mix until just combined.
  4. Fold in chocolate chips and sprinkles. Scoop batter into the prepared pan and use a spatula to ensure even spreading. Bake for 22-25 minutes or until the edges turn golden brown. Allow to cool completely before frosting.

*For the frosting:*

  1. In a stand mixer, beat together butter and powdered sugar for 2-3 minutes until combined.
  2. Add vanilla, salt, and 2 tablespoons of heavy cream. Beat until smooth. Adjust the consistency by adding more heavy cream if needed.
  3. If desired, add 1-2 drops of gel food coloring for a tint. Mix until evenly colored.

*Assembly:*

  1. Once the bars have cooled completely, spread the buttercream on top.
