Elevate your chocolate chip cookie experience with these delightful Frosted Confetti Cookie Bars! They’re incredibly chewy, filled with colorful confetti sprinkles and chocolate chips. While they’re tasty on their own, I love adding a heavenly vanilla buttercream frosting on top!
Frosted Confetti Cookie Bars

Ingredients
*For the cookie bars:*
- 3/4 cup 12 tbsp melted salted butter
- 1 cup light brown sugar
- 1/3 cup granulated sugar
- 1 tbsp vanilla extract
- 2 eggs at room temperature
- 2 cups all-purpose flour
- 1 tbsp cornstarch
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips milk chocolate or semi-sweet
- 1/2 cup rainbow sprinkles confetti quins or traditional jimmies
*For the frosting:*
- 3/4 cup room temperature salted butter
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 3-5 tbsp heavy cream
- 1/2 tsp salt
- Optional: gel food coloring
- Additional sprinkles for decorating
Instructions
*For the cookie bars:*
- Preheat your oven to 350°F. Grease and line a 9×13 metal pan with parchment paper.
- In a stand mixer bowl, combine melted butter, brown sugar, and granulated sugar. Mix until well combined. Add vanilla and eggs, mixing until incorporated.
- With the mixer on low, add in flour, salt, cornstarch, and baking soda. Mix until just combined.
- Fold in chocolate chips and sprinkles. Scoop batter into the prepared pan and use a spatula to ensure even spreading. Bake for 22-25 minutes or until the edges turn golden brown. Allow to cool completely before frosting.
*For the frosting:*
- In a stand mixer, beat together butter and powdered sugar for 2-3 minutes until combined.
- Add vanilla, salt, and 2 tablespoons of heavy cream. Beat until smooth. Adjust the consistency by adding more heavy cream if needed.
- If desired, add 1-2 drops of gel food coloring for a tint. Mix until evenly colored.
*Assembly:*
- Once the bars have cooled completely, spread the buttercream on top.
