Servings 4

  • 20 soft Medjool dates pitted
  • 1/3 cup creamy peanut butter
  • 1/2 cup raw peanuts
  • 1 1/2 cups chocolate chips
  • 1 teaspoon coconut oil
  • A pinch of flaky salt

  • Start by preparing the dates: remove the pits, smash them down, and line them up on a parchment-lined baking sheet. Then, flatten them using the bottom of a drinking glass sprayed with oil.
  • Next, drizzle peanut butter over the dates and sprinkle on the crushed peanuts.
  • In a small bowl, melt the chocolate chips with coconut oil in the microwave, stirring in-between until smooth.
  • Pour the melted chocolate over the date and peanut mixture, then chill in the fridge for an hour or freeze for 35 minutes until set.
  • Once it’s set, sprinkle some flaky salt on top, break it apart, and enjoy! Store any leftovers in the fridge in an airtight container for up to a week.
