  • 20 soft Medjool dates (pitted)
  • 1/3 cup creamy peanut butter
  • 1/2 cup raw peanuts
  • 1 1/2 cups chocolate chips
  • 1 teaspoon coconut oil
  • A pinch of flaky salt


Instructions

  1. Start by preparing the dates: remove the pits, smash them down, and line them up on a parchment-lined baking sheet. Then, flatten them using the bottom of a drinking glass sprayed with oil.
  2. Next, drizzle peanut butter over the dates and sprinkle on the crushed peanuts.
  3. In a small bowl, melt the chocolate chips with coconut oil in the microwave, stirring in-between until smooth.
  4. Pour the melted chocolate over the date and peanut mixture, then chill in the fridge for an hour or freeze for 35 minutes until set.
  5. Once it’s set, sprinkle some flaky salt on top, break it apart, and enjoy! Store any leftovers in the fridge in an airtight container for up to a week.
