Easy Pizza Frittata

Ingredients
- 8 eggs
- 1/2 cup of milk or your preferred non-dairy milk
- 1 cup of marinara sauce
- 1 teaspoon of oregano
- 1/2 teaspoon of ground black pepper
- 1 tablespoon of olive oil or avocado oil
- 1 medium yellow onion finely diced
- 3 cloves of garlic minced
- About 1 1/2 cups of spinach around 2 handfuls
- 1/2 to 3/4 cup of shredded mozzarella cheese
- 12-14 slices of pepperoni
Instructions
- Preheat your oven to 425°F.
- In a large bowl, whisk together the eggs, milk, marinara sauce, oregano, and black pepper. Set aside.
- Heat a 10-12-inch oven-safe skillet over medium heat and add the olive oil.
- Once the oil is hot, add the diced onion and minced garlic, and sauté for about 4 minutes until the onions soften.
- Add the spinach to the skillet and continue stirring until it wilts.
- Pour the egg mixture into the skillet without stirring and let it cook for about 5-6 minutes until the edges begin to set.
- Sprinkle the shredded mozzarella cheese over the top, followed by the pepperoni slices.
- Transfer the skillet to the oven and bake for approximately 6 minutes until the frittata is fully cooked.
