You can personalize it by adding your favorite veggies, making it a great way to use up whatever you have in your fridge. Mushrooms and bell peppers would be fantastic in this!

Easy Pizza Frittata

Ingredients

  • 8 eggs
  • 1/2 cup of milk or your preferred non-dairy milk
  • 1 cup of marinara sauce
  • 1 teaspoon of oregano
  • 1/2 teaspoon of ground black pepper
  • 1 tablespoon of olive oil or avocado oil
  • 1 medium yellow onion finely diced
  • 3 cloves of garlic minced
  • About 1 1/2 cups of spinach around 2 handfuls
  • 1/2 to 3/4 cup of shredded mozzarella cheese
  • 12-14 slices of pepperoni

Instructions

  • Preheat your oven to 425°F.
  • In a large bowl, whisk together the eggs, milk, marinara sauce, oregano, and black pepper. Set aside.
  • Heat a 10-12-inch oven-safe skillet over medium heat and add the olive oil.
  • Once the oil is hot, add the diced onion and minced garlic, and sauté for about 4 minutes until the onions soften.
  • Add the spinach to the skillet and continue stirring until it wilts.
  • Pour the egg mixture into the skillet without stirring and let it cook for about 5-6 minutes until the edges begin to set.
  • Sprinkle the shredded mozzarella cheese over the top, followed by the pepperoni slices.
  • Transfer the skillet to the oven and bake for approximately 6 minutes until the frittata is fully cooked.
  • Remove from the oven, allow it to cool for a bit, then slice and serve! Enjoy your delicious pizza frittata!
