Easy One Bowl Banoffee Snack Cake

Ingredients

For the Cake:

  • cup dairy-free milk + 2 tsp apple cider vinegar
  • 3 ripe bananas mashed
  • cups self-rising flour
  • ¼ cup vegan vanilla protein powder
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ cup olive oil
  • ½ cup sugar
  • ¼ cup dairy-free yogurt

For the Toffee Sauce:

  • ½ cup almond butter
  • ¼ cup maple syrup
  • 2 tbsp melted coconut oil

For the Frosting:

  • 1 cup dairy-free cream cheese
  • cup vegan vanilla protein powder
  • 3 tbsp dairy-free milk

Instructions

Preheat the Oven:

  • Preheat your oven to 350°F (180°C).
  • Line a square baking tin with parchment paper.

Prepare the Batter:

  • In a large bowl, mash the bananas.
  • Add the dairy-free milk mixture (with apple cider vinegar), olive oil, and dairy-free yogurt. Mix until combined.
  • Sift in the self-rising flour, protein powder, baking powder, and cinnamon. Stir until just combined.

Bake the Cake:

  • Pour the batter into the prepared tin.
  • Bake for 35-45 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.

Make the Toffee Sauce:

  • While the cake is baking, combine almond butter, maple syrup, and melted coconut oil in a bowl, stirring until smooth.

Soak the Cake:

  • When the cake is still warm, poke holes all over the top with a fork or skewer.
  • Pour the toffee sauce evenly over the cake, allowing it to soak in.

Prepare the Frosting:

  • In a bowl, whip together the dairy-free cream cheese, vanilla protein powder, and dairy-free milk until smooth and creamy.

Frost the Cake:

  • Once the cake has cooled completely, spread the vanilla frosting evenly over the top.
