For the Steak & Marinade

  • 1 lb sirloin steak, around 1-inch thick
  • 3 tbsp olive oil
  • 2 garlic cloves, finely minced
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ÂĽ tsp black pepper

Base of the Bowl

  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice for low-carb)
  • 1 cup roasted chickpeas (optional for keto or paleo)

Fresh Toppings

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup pitted kalamata olives
  • â…“ cup crumbled feta (omit for dairy-free)
  • ÂĽ cup fresh herbs, parsley or dill, chopped

Tzatziki Sauce

  • 1 cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • ½ cucumber, grated and squeezed dry
  • 1 tbsp fresh lemon juice
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • Salt and pepper, to taste

Lemon Vinaigrette

  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp honey (optional, omit for Whole30)
  • 1 garlic clove, minced
  • ½ tsp dried oregano
  • Salt and pepper, to taste


Instructions

  1. Marinate the Steak
    • In a bowl, combine olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper. Rub the mixture all over the steak. Cover and let it marinate at least 30 minutes at room temperature or up to 4 hours in the fridge for extra flavor.
  2. Prepare the Tzatziki
    • In a small bowl, mix together yogurt, grated cucumber, lemon juice, garlic, dill, salt, and pepper. Chill in the fridge until ready to serve.
  3. Make the Lemon Vinaigrette
    • Whisk together olive oil, lemon juice, honey (if using), garlic, oregano, salt, and pepper. Set aside.
  4. Cook the Steak
    • Heat a skillet over medium-high heat. Sear the steak 4–5 minutes per side for medium-rare, or adjust to your preferred doneness. Let the steak rest 5 minutes before slicing thinly against the grain.
  5. Assemble the Bowls
    • Start with a layer of cooked grains in each serving bowl. Top with sliced steak, roasted chickpeas, and fresh vegetables. Sprinkle with olives, feta, and fresh herbs. Finish each bowl with a spoonful of tzatziki and a drizzle of lemon vinaigrette.
