Creamy, protein-rich, and freezer-ready — these little bites are a no-fuss treat for kids and grownups. They take minutes to assemble and keep in the freezer for quick grab-and-go snacks or a light chilled dessert.
Ingredients
- Plain Greek yogurt — 1 cup
- Smooth peanut butter — ½ cup
- Honey or maple syrup — 2 tablespoons (adjust to taste)
- Vanilla extract — 1 teaspoon
- Optional add-ins: mini chocolate chips, chopped nuts, or small berry pieces
Instructions
- In a mixing bowl, whisk the Greek yogurt together with the peanut butter, sweetener, and vanilla until the mixture is silky and even.
- Spoon or pipe the mixture into silicone molds, ice cube trays, or mini paper-lined muffin cups. If you like, press a few chocolate chips, a sprinkle of nuts, or a tiny berry into the top of each portion.
- Transfer the tray to the freezer and chill until completely set — about 3–4 hours (overnight works too).
- Once firm, remove the bites from the molds and store them in a freezer-safe container, separated with parchment if stacking.
Notes
- Keep refrigerated in the freezer up to two weeks for best texture.
- If too hard, let a few pieces sit at room temperature for 1–2 minutes before eating so they soften slightly.
