Easy Chocolate Strawberry Mug Cakes For Two
Servings 2 mug cakes
Ingredients
Cakes:
- 6 tablespoons whole milk
- 10 chocolate cream cookies like Oreo
- 1 tablespoon vegetable oil
- 1 tablespoon sugar
- ½ teaspoon vanilla extract
- 1 tablespoon all-purpose flour
- 1 tablespoon cocoa powder
- ½ teaspoon baking powder
- ¼ teaspoon salt
Topping:
- ½ cup chopped milk chocolate
- Vegetable oil as needed
- 6 strawberries roughly chopped
Instructions
- In a bowl, add the milk and cookies. Crush the cookies with a fork until there are no large chunks.
- Add the oil, vanilla, and sugar, and whisk to combine.
- Sift in the flour, cocoa powder, baking powder, and salt. Whisk until just combined.
- Divide the batter evenly between 2 microwave-safe mugs (10-12 oz each).
- Microwave each mug for 60-90 seconds until the cakes are done.
- Meanwhile, melt the chocolate over a double boiler (or microwave in 10-second increments, stirring in between until melted). Add vegetable oil as needed to make the chocolate pourable.
- Once the cakes are done, top with chopped strawberries and pour over the melted chocolate. These are delicious warm but can be cooled slightly before adding the toppings.
- Serve and enjoy!
Notes
- These cakes are best eaten the same day.
- You can easily halve this recipe to make just one mug cake.
