  • 1 cup prepared pancake batter (follow package instructions)
  • 2 teaspoons cinnamon
  • 2 tablespoons coconut sugar or Monkfruit Sweetener
  • 3 tablespoons maple syrup (optional, for dipping)


Instructions

  1. Start by preparing your pancake batter as instructed on the package, and set it aside. Then, prepare your apples by slicing them into 1/4 to 1/2 inch slices and removing the cores. You can use a melon baller or a small cookie cutter for this step.
  2. Next, heat a pan on the stove over medium heat and grease it with butter or oil. I recommend using avocado oil.
  3. Dip each apple slice into the pancake batter, ensuring they’re fully coated. Then, place the coated apples in the pan and cook for about 2 minutes on each side until they turn golden brown.
  4. Once cooked, mix cinnamon and coconut sugar in a small bowl, and roll each pancake in the mixture.
