Dulce de Leche Crumbl Cookies

Ingredients

For the Cookie Dough:
- 1/2 cup unsalted butter softened (113 grams)
- 1/3 cup granulated sugar 66 grams
- 2 tablespoons brown sugar 25 grams
- 2/3 cup Eagle Brand® Sweetened Condensed Milk 198 grams
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour 255 grams
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon powder
For the Cinnamon Sugar Topping:
- 3 tablespoons granulated sugar
- 1/2 teaspoon cinnamon powder
For the Cream Cheese Frosting:
- 2 sticks unsalted butter slightly softened (226 grams)
- 1/4 cup cream cheese slightly softened (56 grams)
- 2/3 cup Eagle Brand® Sweetened Condensed Milk 198 grams
- 2 tablespoons dulce de leche
- 2 teaspoons vanilla extract
Instructions
For the Dulce de Leche:
- Preheat your oven to 350ºF.
- Place a small pan filled with the sweetened condensed milk inside a larger pan filled with water to create a water bath.
- Cover the small pan with foil and bake for 2 to 4 hours until thick and dark. Stir occasionally.
- Let it cool completely before using.
For the Cookie Dough:
- Preheat your oven to 350ºF.
- Line two baking sheets with parchment paper.
- Beat butter until creamy, then add sugars and beat until fluffy.
- Mix in condensed milk, egg yolk, and vanilla.
- Add dry ingredients and mix until combined.
- Refrigerate dough for 20 minutes.
For the Cinnamon Sugar Topping:
- Mix cinnamon and sugar together.
To Assemble the Cookies:
- Scoop 1/3 cup of dough and roll in cinnamon sugar.
- Place on baking sheet and chill for 20 minutes.
To Bake the Cookies:
- Bake for 12 to 15 minutes until golden around edges.
For the Cream Cheese Frosting:
- Ensure butter and cream cheese are slightly softened.
- Beat together until creamy, then add condensed milk, dulce de leche, and vanilla and beat until smooth.
To Assemble:
- Pipe cream cheese frosting onto cooled cookies and top with dulce de leche.
