Double Chocolate Tiramisu

Ingredients
For the Cream Layer:
- 1 cup vegan butter room temperature
- 1 3/4 cups powdered sugar sifted
- 1/2 cup vegan cream cheese
- 2 tablespoons dairy-free yogurt
- 2 tablespoons cocoa powder
For the Sponge Layer:
- 1 tablespoon instant coffee brewed in 3/4 cup boiling water
- 2 tablespoons cocoa powder
- 6 tablespoons maple syrup
- 16 vegan sponge fingers
Instructions
- In a bowl, mix the cooled brewed coffee, cocoa powder, and maple syrup together. Soak the vegan sponge fingers in this coffee mixture, then arrange them in a single layer in a tin.
- To make the cream layer, beat together the vegan butter, powdered sugar, vegan cream cheese, dairy-free yogurt, and cocoa powder until the mixture is smooth and creamy.
- Spread half of the cream mixture over the soaked sponge fingers.
- Repeat the process to create a second layer of soaked sponge fingers, and top with the remaining cream mixture.
- Dust the top with cocoa powder.
