  • 2 cups cottage cheese
  • 3 large eggs
  • 1 cup shredded mozzarella
  • 1/2 cup mini turkey pepperoni (or chopped regular pepperoni)
  • 1/4 cup grated Parmesan
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper, a small pinch each


Instructions

  1. Heat the oven to 375°F (190°C). Lightly oil or spray a 9×9-inch baking pan.
  2. In a mixing bowl, whisk the cottage cheese with the eggs until you have a fairly uniform, slightly creamy mixture.
  3. Fold in the mozzarella, three-quarters of the pepperoni, the Parmesan, Italian seasoning, garlic powder, and a pinch of salt and pepper. Mix until just combined.
  4. Transfer the mixture to the prepared pan and smooth the top with a spatula. Scatter the remaining pepperoni over the surface for a finishing touch.
  5. Bake on the center rack for 30–35 minutes, until the center is set and the top is bubbling and lightly browned.
  6. Remove from the oven and allow to rest for 5–10 minutes so it firms up for cleaner slices. Serve warm — marinara on the side makes a great dip.
