- 2 cups cottage cheese
- 3 large eggs
- 1 cup shredded mozzarella
- 1/2 cup mini turkey pepperoni (or chopped regular pepperoni)
- 1/4 cup grated Parmesan
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper, a small pinch each
Instructions
- Heat the oven to 375°F (190°C). Lightly oil or spray a 9×9-inch baking pan.
- In a mixing bowl, whisk the cottage cheese with the eggs until you have a fairly uniform, slightly creamy mixture.
- Fold in the mozzarella, three-quarters of the pepperoni, the Parmesan, Italian seasoning, garlic powder, and a pinch of salt and pepper. Mix until just combined.
- Transfer the mixture to the prepared pan and smooth the top with a spatula. Scatter the remaining pepperoni over the surface for a finishing touch.
- Bake on the center rack for 30–35 minutes, until the center is set and the top is bubbling and lightly browned.
- Remove from the oven and allow to rest for 5–10 minutes so it firms up for cleaner slices. Serve warm — marinara on the side makes a great dip.
