Ingredients

  • 2 cups old fashioned rolled oats
  • 3 cups unsweetened almond milk (or your choice of milk)
  • 8 pitted and chopped Medjool dates
  • 1 teaspoon cinnamon
  • 1/4 cup chopped dried apricots
  • 1/4 cup coconut flakes
  • 2 tablespoons chia seeds
  • Pinch of salt


Instructions

  1. In a large mixing bowl, combine oats, dates, cinnamon, apricots, chia seeds, coconut flakes, salt, and milk.
  2. Stir until all the ingredients are well mixed.
  3. Portion the mixture into five 4 oz mason jars.
  4. Refrigerate for at least two hours, preferably overnight.
  5. Serve with toasted walnuts and an extra sprinkle of coconut flakes.
