Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 1¼ teaspoons ground ginger
  • ½ teaspoon salt
  • ⅔ cup unsalted butter, softened (original recipe used lard)
  • 1 cup granulated sugar
  • 1 large egg
  • ¼ cup molasses
  • ½ cup finely chopped walnuts (optional)
  • Extra sugar for rolling


Instructions

  1. Cream the base: In a large bowl, beat the butter and sugar together until light and fluffy.
  2. Add wet ingredients: Mix in the egg, then pour in the molasses and stir until smooth and well combined.
  3. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, cloves, ginger, and salt. If using nuts, stir them into the flour mixture now.
  4. Combine: Gradually add the dry mixture to the wet ingredients, stirring until a soft dough forms.
  5. Chill out: Cover the dough and refrigerate for about 15–20 minutes. This step helps the cookies keep their shape while baking.
  6. Shape the cookies: Scoop out teaspoon-sized portions of dough, roll them into small balls, and coat each one in sugar.
  7. Bake: Arrange the dough balls on a lightly greased or parchment-lined baking sheet, spacing them at least 2 inches apart (they spread a lot!). Bake at 350°F (175°C) for 10–12 minutes, or until the edges turn golden and the tops crack slightly.
  8. Cool: Let the cookies rest on the baking sheet for a minute or two to firm up, then transfer them to a wire rack to cool completely.

Notes

  • For chewy cookies: Bake on the shorter side (around 9–10 minutes).
  • For crispier cookies: Leave them in the oven a bit longer (11–12 minutes).
