Ingredients

  • 1 pound of orzo pasta
  • 1 cup of pasta water (reserved)
  • 4 ounces of cream cheese
  • 1/2 cup of freshly grated Parmesan cheese
  • 2 cloves of grated garlic
  • 3 cups of fresh baby spinach
  • 1 teaspoon of salt (to taste)
  • 1/2 teaspoon of black pepper (to taste)


Instructions

  1. Start by bringing 6 cups of water to a boil in a deep pot. Add 1 tablespoon of kosher salt.
  2. Add the orzo pasta and cook for 7-9 minutes, until it’s perfectly al dente.
  3. Drain the orzo, making sure to reserve one cup of the pasta water.
  4. In a pan over medium heat, combine the drained orzo with cream cheese, garlic, spinach, salt, pepper, and Parmesan cheese. Use the reserved pasta water as needed.
  5. Stir everything together until the cheeses melt and the orzo is coated in a creamy sauce.
