Creamy Parmesan Spinach Orzo

Ingredients
- 1 pound of orzo pasta
- 1 cup of pasta water reserved
- 4 ounces of cream cheese
- 1/2 cup of freshly grated Parmesan cheese
- 2 cloves of grated garlic
- 3 cups of fresh baby spinach
- 1 teaspoon of salt to taste
- 1/2 teaspoon of black pepper to taste
Instructions
- Start by bringing 6 cups of water to a boil in a deep pot. Add 1 tablespoon of kosher salt.
- Add the orzo pasta and cook for 7-9 minutes, until it’s perfectly al dente.
- Drain the orzo, making sure to reserve one cup of the pasta water.
- In a pan over medium heat, combine the drained orzo with cream cheese, garlic, spinach, salt, pepper, and Parmesan cheese. Use the reserved pasta water as needed.
- Stir everything together until the cheeses melt and the orzo is coated in a creamy sauce.
