Description

Looking for an effortless dinner that tastes like comfort in every bite? These slow-cooked garlic butter beef bites with tender potatoes are rich, savory, and basically foolproof. With just a handful of ingredients, your crockpot transforms simple beef and potatoes into a cozy meal perfect for two.

Ingredients

Scale
  • 2 lbs beef stew chunks (boneless, trimmed if needed)
  • lbs baby Yukon gold potatoes
  • 1 tbsp onion powder
  • 1 tsp garlic powder
  • 2 tsp seasoned salt
  • 1 tbsp fresh garlic, finely chopped
  • 5 tbsp butter, cut into small pats

Instructions

  1. Layer the base: Place the beef cubes on one side of your slow cooker and pile the potatoes on the other side so they cook evenly.
  2. Season well: Sprinkle the onion powder, garlic powder, and seasoned salt evenly across the beef and potatoes.
  3. Coat the beef: Gently stir or toss the beef only, making sure it’s well covered with seasoning. Leave the potatoes as they are.
  4. Add garlic + butter: Scatter the chopped garlic over everything, then dot the surface with the butter pats so they melt into all the nooks and crannies.
  5. Cook it low + slow: Cover the crockpot and let it cook on LOW for 6 hours, until the beef is fork-tender and the potatoes are buttery soft.
  6. Serve with sauce: Before serving, spoon some of the garlicky butter sauce from the bottom of the crockpot over the beef and potatoes for extra flavor.
  7. Serve warm, dig in, and enjoy the comfort!

Notes

  • For a smoky spin, sprinkle a little smoked paprika on the beef before cooking.
  • Toss in green beans or carrot chunks during the last hour for extra color and veggies.
  • This recipe also works beautifully for meal prep—the beef and potatoes reheat like a dream.
