Ingredients

**For the cookie cake:**

  • 1 cup melted salted butter
  • 1 ¼ cups granulated sugar
  • ¾ cup light brown sugar
  • 2 tsp vanilla extract
  • 2 eggs at room temperature
  • 1 ⅔ cups all-purpose flour
  • 2 tsp cornstarch
  • 1 cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt

**For the ganache:**

  • 8 oz semi-sweet chocolate baking bars or chocolate chips
  • ¾ cup heavy cream
  • ½ tsp vanilla extract
  • ½ cup cosmic brownie sprinkles

Instructions

**For the cookie cake:**

  • In your trusty stand mixer, blend the melted butter, granulated sugar, light brown sugar, and vanilla extract until creamy. Add the room temperature eggs and mix until well incorporated.
  • Slowly introduce the flour, cornstarch, cocoa powder, baking soda, and salt. Mix until everything dances together in perfect harmony.
  • Preheat the oven to 350°F. Grease an 11-inch springform pan, line the bottom with parchment paper, and spread your cookie dough evenly. Bake for 25-30 minutes until the edges and top are splendidly set. Allow it to cool completely.

**For the ganache:**

  • Break the chocolate into pieces (unless using chips) and place it in a heatproof bowl.
  • Heat the cream in a small pot on the stove until it gently simmers. Pour it over the chocolate and let the magic happen for 5 minutes.
  • Add vanilla extract and whisk until the ganache is smooth. Let it cool for 15-30 minutes, reaching the perfect spreadable consistency.
  • Pour this luscious ganache over the cooled cookie cake, spread it evenly to the edges, and sprinkle the cosmic brownie sprinkles on top. Serve immediately for instant bliss or patiently wait for the ganache to set.
