Copycat Trader Joe’s Caramel Coffee Cashews

I stumbled upon these at TJ’s the other day and was eager to give them a try, but they were just okay! I felt like they lacked something special, and I thought, “I CAN MAKE THESE BETTER!” So, I did. My version is free from refined sugar, gluten, and packs a protein punch thanks to the collagen. Plus, once they’re out of the oven and cooled down, they’re not sticky at all, making them the perfect snack to carry in your purse.

Here’s how you can make them:

Course Snack

Ingredients
  

  • 1 1/2 cups raw cashews
  • 3/4-1 tablespoon instant coffee/espresso depending on how strong of a coffee taste you like
  • 2 tablespoons maple syrup
  • 3/4 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 tablespoon collagen peptides

Instructions
 

  • Preheat your oven to 350F. In a medium bowl, mix all the ingredients mentioned above.
  • Spread the nut mixture evenly on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes, rotating halfway through.
  • Once done, take them out of the oven and let them cool for about 10 minutes. Then, break them into pieces and enjoy!
  • Store them in a glass container in the fridge for up to 3 weeks. Enjoy!
