Coffee Walnut Banana Bread
Super moist banana bread with crunchy walnuts and a bold coffee flavor 🤎
Ingredients
- 2 ½ cups self-rising flour
- ½ cup vegan vanilla protein powder or extra flour
- ½ tsp baking powder
- 1 tsp baking soda
- ¾ cup sugar
- 1 ¼ cups dairy-free milk like almond milk + 1 tbsp apple cider vinegar
- ¼ cup brewed coffee
- â…“ cup dairy-free yogurt
- 3 ripe bananas mashed
- 1 cup crushed walnuts
Coffee Glaze:
- â…” cup powdered sugar
- 2 tbsp maple syrup
- 1 tbsp melted vegan butter
- 1-2 tsp brewed coffee
- 1 tsp instant coffee
Instructions
- Preheat your oven to 340°F (170°C).
- Grease a 2 lb loaf pan.
- Mix the dairy-free milk and vinegar, then set aside to thicken.
- In a large bowl, sift together the dry ingredients.
- In a separate bowl, mix the wet ingredients.
- Combine the wet and dry ingredients, stirring gently until just combined.
- Pour the batter into the loaf pan and bake for 45-50 minutes.
- While the bread cools, prepare the glaze by mixing all the glaze ingredients.
- Drizzle the glaze over the cooled banana bread.
