Coffee Walnut Banana Bread

Super moist banana bread with crunchy walnuts and a bold coffee flavor 🤎

Ingredients

  • 2 ½ cups self-rising flour
  • ½ cup vegan vanilla protein powder or extra flour
  • ½ tsp baking powder
  • 1 tsp baking soda
  • ¾ cup sugar
  • 1 ¼ cups dairy-free milk like almond milk + 1 tbsp apple cider vinegar
  • ¼ cup brewed coffee
  • â…“ cup dairy-free yogurt
  • 3 ripe bananas mashed
  • 1 cup crushed walnuts

Coffee Glaze:

  • â…” cup powdered sugar
  • 2 tbsp maple syrup
  • 1 tbsp melted vegan butter
  • 1-2 tsp brewed coffee
  • 1 tsp instant coffee

Instructions

  • Preheat your oven to 340°F (170°C).
  • Grease a 2 lb loaf pan.
  • Mix the dairy-free milk and vinegar, then set aside to thicken.
  • In a large bowl, sift together the dry ingredients.
  • In a separate bowl, mix the wet ingredients.
  • Combine the wet and dry ingredients, stirring gently until just combined.
  • Pour the batter into the loaf pan and bake for 45-50 minutes.
  • While the bread cools, prepare the glaze by mixing all the glaze ingredients.
  • Drizzle the glaze over the cooled banana bread.
