Description

Bright, silky, and ready first thing in the morning, these overnight oats give you coconut cream pie vibes with zero baking.


Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup coconut milk (use canned full-fat for extra richness)
  • 1 tablespoon Greek yogurt
  • 1 tablespoon desiccated or shredded coconut
  • 1 teaspoon honey (or maple syrup for a vegan swap)


Instructions

  1. Choose a lidded jar or small container. Add the oats, pour in the coconut milk, then spoon in the Greek yogurt.
  2. Sprinkle the shredded coconut over the mixture, drizzle the honey on top, and stir until everything is evenly combined.
  3. Close the jar and refrigerate for at least 6 hours — overnight is best so the oats soften fully and flavors meld.
  4. In the morning, give the oats a good stir and add a little extra shredded coconut or fresh fruit before eating.

Notes

Quick note: stir well before chilling so the yogurt distributes evenly and you don’t end up with dry pockets of oats. Enjoy chilled, or warm briefly if you prefer a hot breakfast.
