Bright, silky, and ready first thing in the morning, these overnight oats give you coconut cream pie vibes with zero baking.

- 1/2 cup old-fashioned rolled oats
- 1/2 cup coconut milk (use canned full-fat for extra richness)
- 1 tablespoon Greek yogurt
- 1 tablespoon desiccated or shredded coconut
- 1 teaspoon honey (or maple syrup for a vegan swap)
Instructions
- Choose a lidded jar or small container. Add the oats, pour in the coconut milk, then spoon in the Greek yogurt.
- Sprinkle the shredded coconut over the mixture, drizzle the honey on top, and stir until everything is evenly combined.
- Close the jar and refrigerate for at least 6 hours — overnight is best so the oats soften fully and flavors meld.
- In the morning, give the oats a good stir and add a little extra shredded coconut or fresh fruit before eating.
Notes
Quick note: stir well before chilling so the yogurt distributes evenly and you don’t end up with dry pockets of oats. Enjoy chilled, or warm briefly if you prefer a hot breakfast.
