Description

This loaf brings the cozy sweetness of a sugared donut into a simple quick-bread form: super tender inside, with a warm, spiced sugar crust that gives each slice that classic donut vibe.

For the loaf

  • 2 cups (250 g) all-purpose flour
  • 1½ cups (300 g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1¼ cups (306 g) whole milk
  • 1 large egg, at room temperature
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon vanilla extract

For the spiced sugar finish

  • ¼ cup (½ stick / 57 g) unsalted butter, melted
  • ½ cup (100 g) granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg


Instructions

  1. Heat the oven to 350°F (175°C). Grease an 8½ x 4½-inch loaf pan with nonstick spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly mixed.
  3. In a separate bowl, beat the milk, egg, melted butter, and vanilla until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir gently just until the batter comes together — a few small lumps are fine. The batter should be slightly pourable; avoid over-stirring.
  5. Transfer the batter to the prepared pan and smooth the top.
  6. Bake for 60–70 minutes, or until the center tests done (a toothpick should return with a few moist crumbs) and the crust turns a warm golden color.
  7. Let the loaf rest in the pan for about 10 minutes, then lift it out onto a sheet of parchment or a cooling rack.
  8. While the bread is still warm, brush the surface all over with the ¼ cup melted butter. In a small bowl, combine the ½ cup sugar with cinnamon and nutmeg; sprinkle this spiced sugar over the buttered loaf, rotating to coat every side. Save any leftover sugar blend for another use.

Notes

Quick tip: For best results, remove the loaf from the pan while warm so the sugar adheres evenly. If the top browns too quickly, tent loosely with foil for the last 10–15 minutes of baking.
