Ingredients

  • 14 ounces of silken tofu (soft, gently pressed to remove excess water)
  • 1 cup of dark vegan chocolate chips (melted with 1 tablespoon of coconut oil)
  • 1/4 cup of cacao powder
  • 1/4 cup of pure maple syrup
  • A pinch of salt
  • 1 teaspoon of vanilla extract


Instructions

  1. Start by draining the tofu and gently pressing out any excess water with a paper towel. Then, cut it into cubes and set aside.
  2. Melt the chocolate chips and coconut oil together until smooth and creamy. You can do this in the microwave or on the stovetop using a double boiler.
  3. In a blender or food processor, combine all the ingredients, including the melted chocolate, until you get a smooth and creamy mixture.
  4. Pour the pudding into containers, top with dairy-free whipped cream and chocolate shavings if desired, and dig in!
