Ingredients

  • 14 ounces of silken tofu soft, gently pressed to remove excess water
  • 1 cup of dark vegan chocolate chips melted with 1 tablespoon of coconut oil
  • 1/4 cup of cacao powder
  • 1/4 cup of pure maple syrup
  • A pinch of salt
  • 1 teaspoon of vanilla extract

Instructions

  • Start by draining the tofu and gently pressing out any excess water with a paper towel. Then, cut it into cubes and set aside.
  • Melt the chocolate chips and coconut oil together until smooth and creamy. You can do this in the microwave or on the stovetop using a double boiler.
  • In a blender or food processor, combine all the ingredients, including the melted chocolate, until you get a smooth and creamy mixture.
  • Pour the pudding into containers, top with dairy-free whipped cream and chocolate shavings if desired, and dig in!

Notes

  • A blender or food processor ensures a smooth pudding texture.
  • Silken tofu gives you that classic pudding consistency, while firm tofu offers a thicker texture.
  • Choose sweet chocolate for the best flavor experience.
  • And don’t forget those 4oz mason jars for the perfect single-serve portions!
