Chocolate Tofu Pudding
Ingredients
- 14 ounces of silken tofu soft, gently pressed to remove excess water
- 1 cup of dark vegan chocolate chips melted with 1 tablespoon of coconut oil
- 1/4 cup of cacao powder
- 1/4 cup of pure maple syrup
- A pinch of salt
- 1 teaspoon of vanilla extract
Instructions
- Start by draining the tofu and gently pressing out any excess water with a paper towel. Then, cut it into cubes and set aside.
- Melt the chocolate chips and coconut oil together until smooth and creamy. You can do this in the microwave or on the stovetop using a double boiler.
- In a blender or food processor, combine all the ingredients, including the melted chocolate, until you get a smooth and creamy mixture.
- Pour the pudding into containers, top with dairy-free whipped cream and chocolate shavings if desired, and dig in!
