Ingredients

Scale
  • 2 tablespoons grated zucchini (squeeze out excess moisture)
  • ½ cup rolled or quick oats (old fashioned oats work too!)
  • 1/4 cup milk of your choice
  • 1 egg or flax egg substitute
  • ½ ripe banana
  • 1 tablespoon maple syrup
  • 1 scoop collagen peptides
  • 1 tablespoon cashew or almond butter
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 3 tablespoons dairy-free chocolate chips


Instructions

  1. Preheat your oven to 350°F.
  2. Grease an oven-safe mug or 6-8 oz ramekin.
  3. Finely grate the zucchini and remove excess moisture with a paper towel.
  4. In a blender, combine all ingredients except the zucchini and chocolate chips, and blend until smooth.
  5. Pour the oat mixture into the mug or ramekin.
  6. Stir in the grated zucchini and chocolate chips.
  7. Bake for 25 minutes.
  8. Remove from the oven and add a splash of milk if desired. Enjoy your delicious baked oats!
