Chocolate Chip Banana Bread

Ingredients
- – 1 1/2 cups all-purpose flour 180 g
- – 2 tbsp cornstarch 16 g
- – 2 tsp baking powder 8 g
- – 1 tsp baking soda 4 g
- – 3 medium bananas ~1.5 cups
- – 2 large eggs
- – 2 tsp vanilla extract 10 g
- – 1 tsp salt 3 g (use 1/2 tsp if using Morton salt)
- – 1 stick of salted butter 113 g
- – 1/2 cup brown sugar 100 g
- – 1/2 cup granulated sugar 100 g
- – 1 cup mini chocolate chips 170 g, plus additional regular-sized chips for topping
Instructions
- Preheat your oven to 325°F. Grease a 9×5″ loaf pan with cooking oil spray (or use two smaller loaf pans, ensuring they have at least a 1″ rim after filling).
- In a bowl, combine the flour, cornstarch, baking powder, and baking soda.
- In another bowl, mash the ripe bananas until mostly smooth. Add the eggs, vanilla extract, and salt. Mix well and set aside.
- Using a stand mixer with a paddle attachment or a hand mixer, beat the butter and sugars until light and fluffy, about two minutes. Scrape down the sides of the bowl and mix again for about 30 seconds.
- Add the banana mixture to the butter-sugar mixture and beat until fully incorporated. Scrape down the sides of the bowl and mix again for another 30 seconds.
- Gradually add the dry ingredients to the wet ingredients, pulsing together until just combined. Gently fold in the mini chocolate chips until evenly distributed.
- Pour the batter into the prepared loaf pan(s), spreading it out evenly.
- Sprinkle additional regular-sized chocolate chips over the top of the batter for extra chocolate goodness.
- Bake for 75-90 minutes, or until a toothpick inserted into the center comes out clean. Keep an eye on your bread as baking times may vary depending on your oven and the size of your baking pan. Start testing for doneness after about an hour of baking.
