Description

These Cherry Bourbon Balls are a rich, bite-sized indulgence that brings together smooth butter, bold bourbon, and the sweet pop of maraschino cherries — all wrapped in a glossy layer of semi-sweet chocolate. Perfect for gifting, sharing, or sneaking straight from the fridge, they’re the ultimate no-bake treat for Christmas, Valentine’s Day, or even your next Kentucky Derby celebration.

Ingredients

Scale
  • ¾ cup finely chopped pecans
  • ¼ cup bourbon
  • ¼ cup finely chopped maraschino cherries
  • ½ cup softened butter
  • 4 cups powdered sugar
  • 3 cups semi-sweet chocolate chips
  • 2 tablespoons shortening or coconut oil
  • 30 candied cherry halves, for garnish

Instructions

Step 1: Soak the Pecans
Pour the bourbon over the chopped pecans in a small bowl. Give them a good stir, cover, and let the mixture rest for at least an hour — or even better, overnight. This soaking step gives the pecans that deep, bourbon-kissed flavor that makes every bite sing.

Step 2: Make the Filling
In a large mixing bowl, beat the softened butter with a hand mixer until creamy. Gradually add the powdered sugar, mixing a little at a time until you get a thick, crumbly dough-like texture.

Step 3: Combine and Shape
Fold the bourbon-soaked pecans and chopped maraschino cherries into the butter mixture. Stir with a wooden spoon (or use clean hands for an easier mix) until everything is evenly blended. Roll the mixture into 1-inch balls and set them on a parchment-lined tray. Cover and refrigerate for at least 1 hour to firm up.

Step 4: Melt the Chocolate
In a medium heavy-bottomed saucepan, melt the chocolate chips with the shortening or coconut oil over low heat. Stir continuously to keep the chocolate smooth and glossy — don’t let it burn!

Step 5: Dip and Decorate
Using two forks or a toothpick, dip each chilled ball into the melted chocolate, turning to coat it completely. Let any excess drip off, then place the chocolate-covered balls back on the parchment paper. While the chocolate is still warm, press a candied cherry half on top for that signature festive finish.

Step 6: Chill and Set
Refrigerate the bourbon balls until the chocolate hardens. Once set, they’re ready to devour — or gift, if you can resist them that long.

Notes

Storage Tips

Store the Cherry Bourbon Balls in an airtight container in the refrigerator, where they’ll stay fresh and delicious for up to two weeks. If you prefer a firmer texture, enjoy them straight from the fridge. For a softer bite, let them sit at room temperature for a few minutes before serving.
