Who says you can’t enjoy chocolate for breakfast? This easy-to-make double chocolate baked oatmeal is not only delicious but also a breeze to clean up afterward – a definite win-win!

Chocolate Banana Bread Baked Oatmeal

Ingredients
  

  • 2 cups of old-fashioned rolled oats
  • 1/3 cup of maple syrup
  • 1/4 cup of cocoa powder
  • 1 teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of salt
  • 2 cups of your favorite milk
  • 3 ripe bananas mashed
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 1/2 cup of dark chocolate chips
  • 2 tablespoons of melted unsalted butter

Instructions
 

  • Preheat your oven to 350°F.
  • Grease an 11×7 non-stick baking dish with cooking spray.
  • Combine all the ingredients, except the chocolate chips, in the prepared baking dish – mashed bananas, oats, maple syrup, baking powder, cinnamon, salt, milk, egg, melted butter, and vanilla extract. Stir until well combined. Top with dark chocolate chips.
  • Bake for 25-30 minutes or until the oatmeal is set and golden brown on top.
  • Slice and serve with your favorite toppings.

Notes

  • Use grass-fed organic unsalted butter if available, or any butter you have on hand. Alternatively, substitute the butter with 1 teaspoon of butter extract.
  • Toast walnuts for an extra crunch!
  • Store leftovers in the refrigerator for up to 4 days.
  • Get creative with toppings – try various nuts, unsweetened coconut flakes, dried fruit, peanut butter, or even whipped cream. Enjoy your chocolaty breakfast treat!
