Chocolate and Biscoff Pudding
The only thing better than chocolate pudding is a self-saucing Biscoff-filled chocolate pudding… am I right? 😍 This dessert is incredibly easy to make! The sauce starts on top but magically bakes into the bottom, creating the most indulgent molten chocolate cake 😍
Ingredients
For the Pudding:
- 1¾ cups self-rising flour
- ¼ cup chocolate vegan protein powder
- ¼ cup cocoa powder
- 1 tsp baking powder
- ¾ cup sugar
- 1 cup dairy-free milk + 1 tsp vinegar
- ⅓ cup dairy-free yogurt
- ¼ cup neutral oil
- 3 tbsp Biscoff spread
For the Sauce:
- ¼ cup smooth Biscoff spread
- ½ cup light brown sugar
- ¼ cup cocoa powder
- 1 cup boiling water
Instructions
- Preheat your oven to 340°F (170°C).
- Line a baking dish with parchment paper.
- Mix the dairy-free milk and vinegar, then set aside to thicken.
- Sift the flour, protein powder, cocoa powder, and baking powder into a large bowl.
- In a separate bowl, combine the milk mixture, yogurt, oil, and Biscoff spread.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined.
- Pour the batter into the prepared baking dish.
- To make the sauce, pour the boiling water over the Biscoff spread, then mix in the brown sugar and cocoa powder until smooth.
- Carefully pour the sauce mixture over the cake batter.
- Bake for 25-30 minutes, or until the center is almost set.
- Let the pudding cool slightly before serving.
