Chipotle Salmon Bowls

Ingredients
**Salmon:**
- 1 pound of salmon cut into cubes
- 2 to 3 tablespoons of chipotle adobo sauce adjust to taste
- 2 tablespoons of olive oil
- 2 teaspoons of finely minced fresh garlic
- 1 tablespoon of chili powder
- 1 teaspoon of cumin
- 3/4 to 1 teaspoon of salt adjust to taste
- 1 teaspoon of oregano
- 1 teaspoon of coriander
- 1/2 teaspoon of black pepper
- 1 tablespoon of olive oil for drizzling in the skillet/pan
**Mango Avocado Salsa:**
- 1 mango diced
- 1 to 2 avocados diced
- 1 jalapeno diced
- 1/2 red onion diced
- 2 tablespoons of finely chopped cilantro
- Salt and black pepper to taste
- Squeeze of lime juice
**For assembling:**
- Cilantro lime rice
- Corn
- Lettuce
- Cotija cheese
- Black beans
- Sour cream
Instructions
- In a large bowl, mix the cubed salmon with olive oil, chipotle adobo paste, garlic, chili powder, salt, coriander, cumin, oregano, and black pepper until the salmon is evenly coated in the marinade.
- Heat olive oil in a pan over medium-high heat. Once hot, add the salmon and avoid overcrowding the pan. Sear the salmon on all sides until it turns golden brown and is cooked in the center, which should take about 6 to 8 minutes.
- For the mango avocado salsa, combine the diced mango, avocado, jalapeno, red onion, cilantro, lime juice, salt, and black pepper in a bowl. Mix well and adjust seasoning according to your taste.
- Serve the cooked salmon over cilantro lime rice, topped with the mango avocado salsa, and any other toppings of your choice!
