Chipotle Cilantro Lime Chicken

Ingredients

  • 1 pound boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons chipotle adobo paste
  • 2 teaspoons minced garlic
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne powder add more for extra spice

**For Basting:**

  • 1 tablespoon unsalted butter melted
  • 2 tablespoons lime juice
  • 1 to 2 tablespoons finely chopped cilantro

Instructions

  • In a large bowl, combine chicken thighs with olive oil, chipotle adobo paste, minced garlic, chili powder, smoked paprika, salt, coriander, cumin, oregano, onion powder, black pepper, and cayenne powder. Mix well to ensure the chicken is evenly coated with the marinade.
  • Prepare the basting liquid by mixing melted butter, lime juice, and chopped cilantro.
  • Heat a cast-iron skillet over medium-high heat. Once hot, add a drizzle of oil to the pan. Add the chicken, ensuring not to overcrowd the skillet. Cook in batches if necessary. After about 5 to 6 minutes, flip the chicken over when one side is golden brown.
  • While cooking, baste the chicken with the lime cilantro butter. Allow the other side to cook until golden brown, about 6 minutes. Reduce the heat to low and cook for an additional 1 to 2 minutes until the chicken is thoroughly cooked.
  • Remove the chicken from the skillet and let it cool for 5 minutes before chopping it into small pieces. If there’s any leftover basting liquid, add it now and mix well.
  • Serve the delicious chicken over rice, in tacos, or on a salad—get ready to enjoy!
