Chewy Sugar Cookies

Ingredients
- 2.5 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 1 cup grass-fed butter
- 1.5 cups cane sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup sugar for coating
Instructions
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- Using an electric mixer with a whisk attachment, cream together softened butter and 1.5 cups of cane sugar on medium speed for about 3 minutes until light and fluffy.
- Add eggs and vanilla extract, then mix until just combined.
- Switch to a paddle attachment, reduce speed to low, and gradually add the flour mixture until just combined. Avoid overmixing.
- Place remaining sugar in a bowl. Using a cookie scoop, form dough into balls, coat each ball in sugar, and place them on the prepared baking sheet.
- Bake for 10-12 minutes or until edges are golden brown.
- Allow cookies to cool for 5 minutes before removing from the baking sheet. Enjoy!
Notes
- Softened grass-fed butter works best for this recipe.
- If butter is not softened, use the boiling water method to soften it.
- Avoid overmixing the ingredients.
- Keep an eye on the cookies while baking to ensure they don’t overcook.
