Chewy Sugar Cookies

Ingredients

  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 cup grass-fed butter
  • 1.5 cups cane sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup sugar for coating

Instructions

  • Preheat oven to 325°F and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  • Using an electric mixer with a whisk attachment, cream together softened butter and 1.5 cups of cane sugar on medium speed for about 3 minutes until light and fluffy.
  • Add eggs and vanilla extract, then mix until just combined.
  • Switch to a paddle attachment, reduce speed to low, and gradually add the flour mixture until just combined. Avoid overmixing.
  • Place remaining sugar in a bowl. Using a cookie scoop, form dough into balls, coat each ball in sugar, and place them on the prepared baking sheet.
  • Bake for 10-12 minutes or until edges are golden brown.
  • Allow cookies to cool for 5 minutes before removing from the baking sheet. Enjoy!

Notes

  • Softened grass-fed butter works best for this recipe.
  • If butter is not softened, use the boiling water method to soften it.
  • Avoid overmixing the ingredients.
  • Keep an eye on the cookies while baking to ensure they don’t overcook.
