In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
Using an electric mixer with a whisk attachment, cream together softened butter and 1.5 cups of cane sugar on medium speed for about 3 minutes until light and fluffy.
Add eggs and vanilla extract, then mix until just combined.
Switch to a paddle attachment, reduce speed to low, and gradually add the flour mixture until just combined. Avoid overmixing.
Place remaining sugar in a bowl. Using a cookie scoop, form dough into balls, coat each ball in sugar, and place them on the prepared baking sheet.
Bake for 10-12 minutes or until edges are golden brown.
Allow cookies to cool for 5 minutes before removing from the baking sheet. Enjoy!
