Cheese Tortellini with Sausage Ragu

  • 18 ounces Refrigerated Cheese Tortellini
  • 1 lb. Ground Italian Sausage
  • 4 ounces Cream Cheese (cubed)
  • 28 ounces Marinara Sauce (Rao’s)
  • 2 cups Shredded Mozzarella Cheese
  • Optional: Fresh Basil (Grated Parmesan Cheese, Garlic)


Instructions

  1. Boil water in a pot, adding a good pinch of salt.
  2. While that heats up, cook Italian sausage in a skillet over medium-high heat. Break it into bite-size pieces with a wooden spoon, cooking until fully done (about 8-10 minutes).
  3. Add cream cheese to the sausage, let it melt, and then stir in marinara sauce. Reduce heat to medium-low.
  4. Cook tortellini as per package instructions, then drain.
  5. Carefully fold the cooked tortellini into the sausage ragu until well coated. Taste and adjust seasoning with salt and pepper based on your marinara sauce.
  6. Sprinkle shredded mozzarella over the tortellini. Broil in the oven for 3-5 minutes until melted. Keep an eye on it!
  7. Top with fresh basil and serve.

Notes

  • Substitutions: Use ground beef instead of Italian sausage, adding salt, pepper, garlic powder, and onion powder for flavor. Try different pasta shapes like ravioli.
  • Swap cream cheese for heavy cream for a slightly thinner sauce with the same great taste.
  • To thin the sauce, add 2 tablespoons of heavy cream, milk, or pasta water according to your preference.
