Caramelized Onion Dip

  • 2 tablespoons unsalted butter
  • 2 tablespoons vegetable oil
  • 2 large yellow onions (1 3/4 pounds total, thinly sliced)
  • Kosher salt
  • 1/2 cup 4 ounces cream cheese, at room temperature
  • 1/2 cup 4 ounces sour cream
  • 1/3 cup mayonnaise
  • Freshly ground black pepper
  • 2 tablespoons sliced chives
  • Potato chips (like Ruffles, for dipping)
  1. In a large skillet over medium heat, melt the butter. Add the oil and swirl to combine. Toss in the onions and 1/2 teaspoon of salt. Cook, stirring occasionally, until the onions start to soften, about 10 to 12 minutes. Reduce the heat to medium-low and continue cooking, stirring occasionally, until the onions turn golden and deeply caramelized, about 40 to 55 minutes more. Transfer to a medium bowl and let cool completely.
  2. Stir in the cream cheese, sour cream, and mayonnaise; season with salt and pepper. Sprinkle with chives. Serve with your favorite chips on the side for dipping. Enjoy the deliciousness!
