Ingredients

  • 1 cup plain Greek yogurt
  • 1/4 cup almond butter
  • 1 tsp vanilla bean paste or vanilla extract
  • 2 tbsp maple syrup
  • 1/2 green apple (peeled and finely chopped)
  • 1/3 cup coconut caramel (divided)
  • 1 cup chocolate chips (melted with coconut oil)


Instructions

  1. In a bowl, combine yogurt, almond butter, maple syrup, and vanilla.
  2. Add finely chopped green apples to the mixture and stir until well combined.
  3. Using a cookie scoop or spoon, place dollops of yogurt onto a parchment-lined baking sheet, spreading evenly in circles.
  4. Add a dollop of caramel to the center of each yogurt bite and freeze until fully firm, approximately 4 hours.
  5. When ready, melt chocolate in a medium bowl, adding a touch of coconut oil for a creamy texture. Microwave in 30-second increments, stirring well between each round.
  6. Working quickly, dip each frozen yogurt bite into the melted chocolate, ensuring full coating. Place back on the parchment paper and return to the freezer for an additional 30 minutes.
  7. Once completely frozen, store in the fridge and enjoy!

Notes

  • Ensure yogurt bites are fully frozen before dipping in melted chocolate.
  • Work in small batches when dipping yogurt in chocolate to prevent melting.
  • Thoroughly coat yogurt bites in chocolate to create the outer shell and prevent seepage when refrigerated.
