Caramel Apple Yogurt Bites

Ingredients

  • 1 cup plain Greek yogurt
  • 1/4 cup almond butter
  • 1 tsp vanilla bean paste or vanilla extract
  • 2 tbsp maple syrup
  • 1/2 green apple peeled and finely chopped
  • 1/3 cup coconut caramel divided
  • 1 cup chocolate chips melted with coconut oil

Instructions

  • In a bowl, combine yogurt, almond butter, maple syrup, and vanilla.
  • Add finely chopped green apples to the mixture and stir until well combined.
  • Using a cookie scoop or spoon, place dollops of yogurt onto a parchment-lined baking sheet, spreading evenly in circles.
  • Add a dollop of caramel to the center of each yogurt bite and freeze until fully firm, approximately 4 hours.
  • When ready, melt chocolate in a medium bowl, adding a touch of coconut oil for a creamy texture. Microwave in 30-second increments, stirring well between each round.
  • Working quickly, dip each frozen yogurt bite into the melted chocolate, ensuring full coating. Place back on the parchment paper and return to the freezer for an additional 30 minutes.
  • Once completely frozen, store in the fridge and enjoy!

Notes

  • Ensure yogurt bites are fully frozen before dipping in melted chocolate.
  • Work in small batches when dipping yogurt in chocolate to prevent melting.
  • Thoroughly coat yogurt bites in chocolate to create the outer shell and prevent seepage when refrigerated.
