Cadbury Egg Cookie Bars

Ingredients

**For the cookie bars:**

  • ¾ cup melted butter salted is my preference, but unsalted works too!
  • 1 cup light brown sugar
  • cup granulated sugar
  • 1 tbsp vanilla extract
  • 2 eggs at room temperature
  • 2 cups all-purpose flour
  • 1 tbsp cornstarch
  • ½ tsp baking soda
  • ½ tsp salt
  • cup semi-sweet chocolate chips
  • 1 cup roughly chopped Cadbury Eggs

**For the frosting:**

  • ¾ cup butter at room temperature again, I like salted, but use unsalted if you prefer!
  • 3-4 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp milk at room temperature
  • ¼ tsp salt
  • Blue food dye

**For garnish:**

  • 1 tbsp cocoa powder
  • 1 tbsp warm water
  • 1 cup roughly chopped Cadbury Eggs

Instructions

**For the cookie bars:**

  • Preheat your oven to 350°F. Grease and line a 9×13 metal pan with parchment paper.
  • In a stand mixer, combine the melted butter, brown and granulated sugar. Mix until it’s all combined.
  • Add in vanilla and eggs, and mix until everything is nicely incorporated.
  • While the mixer is on low, add in the flour, salt, cornstarch, and baking soda. Mix until just combined.
  • Fold in the chocolate chips and Cadbury Eggs.
  • Scoop the batter into the prepared pan and use a spatula to ensure it’s evenly spread out.
  • Bake for 22-25 minutes or until the edges are golden brown. Let it cool completely before frosting.

**For the frosting:**

  • In a stand mixer, beat together the butter and powdered sugar for 2 minutes until smooth.
  • Add in the vanilla, salt, and 2 tablespoons of milk. Beat until smooth.
  • Adjust the consistency by adding more milk if needed. If you’re going for a blue hue, add 1-2 drops of blue food coloring and mix until evenly distributed.

**For the garnish:**

  • Make this right before frosting the cookie bars. In a small bowl, whisk together warm water and cocoa powder until combined.

**To decorate:**

  • Once the cookie bars are cool, spread the frosting evenly on top.
  • Dip the tip of a dry pastry brush into the water and cocoa mixture, shake off excess, pull the bristles back, point at the bars, and slowly release. Repeat for a speckled pattern.
  • Sprinkle the roughly chopped Cadbury Eggs on top.
  • Slice and serve – get ready for a taste bud adventure!
