Buffalo Chicken Wonton Cups

Ingredients
  

  • 2 large chicken breasts about 1.5 pounds, boiled and shredded
  • 3/4 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 2 tablespoons cream cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 teaspoons finely minced garlic
  • 1 tablespoon finely chopped cilantro
  • 1 whole green bell pepper diced
  • Sliced green onions or diced red onions optional
  • Extra cheddar and mozzarella for topping
  • Wonton wrappers
  • Oil spray

**Equipment:**

  • Cupcake tin

Instructions
 

  • Boil a pot of water and season it with salt and black pepper. Add the chicken breasts and boil until fully cooked. Then, shred the chicken.
  • Preheat your oven to 350°F.
  • In a large bowl, combine the shredded chicken, buffalo sauce, ranch dressing, cream cheese, cheddar cheese, mozzarella cheese, minced garlic, cilantro, and diced green bell pepper. You can also add green onions or red onions if you like. Mix everything together until well combined, and set aside.
  • Spray a muffin tin with oil and place one wonton wrapper into each cup. Press down gently to form a cup shape. Spray the top of the wrappers with oil as well. Bake in the oven for about 5 to 6 minutes until they’re slightly golden.
  • Remove the muffin tin from the oven and fill each wonton cup with about two tablespoons of the chicken mixture. Top with shredded cheese and return to the oven for 13 to 15 minutes, or until golden brown and crispy.
