Breakfast Bagel Bites

Ingredients

  • 12 mini bagels halved
  • 1 tablespoon unsalted butter plus extra for bagels
  • 16 eggs
  • 1/4 cup heavy cream
  • 2 cups shredded Cheddar cheese
  • 2 tablespoons sliced chives plus more for garnish
  • 4 slices cooked bacon
  • Kosher salt
  • Freshly ground black pepper

Instructions

  • Preheat the oven to 350°F. Line a large baking sheet with parchment or foil.
  • Lightly butter the mini bagels and place them about 1 inch apart on the prepared baking sheet. Bake until lightly toasted, around 15 minutes.
  • While the bagels toast, make scrambled eggs: In a large bowl, whisk together eggs and cream until frothy. In a large nonstick pan over medium heat, melt butter. Add the egg mixture and immediately reduce heat to medium-low. Stir occasionally with a spatula or wooden spoon. When the eggs are nearly set, season with salt and pepper, and stir in chives.
  • Top each bagel half with scrambled eggs, then sprinkle with cheese and crumbled bacon. Bake until the cheese is melted, about 10 minutes. Garnish with more chives and serve warm. Enjoy your brunch!
