Blueberry Protein Donuts

Ingredients
Dry Ingredients
- 1.5 cups all-purpose flour
- ½ cup vanilla protein powder
- 1 teaspoon baking soda
- ½ cup fresh blueberries
Wet Ingredients
- ½ cup packed light brown sugar
- ¼ cup maple syrup
- 1 cup mashed blueberries
- 2 large eggs
- ½ cup unsweetened plain almond milk
- 2 tablespoons melted coconut oil
Instructions
- Preheat your oven to 350ºF and grease the donut pan with cooking spray.
- In a medium bowl, mix together all the dry ingredients and set aside.
- In a large bowl, whisk together the brown sugar and maple syrup. Add the mashed blueberries, eggs, and almond milk, and stir until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until fully combined. Then, add the melted coconut oil and mix again.
- Fill each donut well generously, about 3/4 full to the top.
- Bake at 350ºF for 8-10 minutes or until a toothpick inserted into the center comes out clean.
- Remove the donuts from the oven and allow them to cool for a few minutes before transferring them to a wire rack to cool completely. Avoid leaving them in the pan for too long to prevent overbaking.
- Store the donuts in an airtight container in a cool, dry place.
