Description

These soft, golden cottage cheese bites are loaded with juicy blueberries, zesty lemon flavor, and wholesome oats. They’re light, fluffy, and packed with protein — basically the kind of snack that keeps you full and feeling good all day long.

  • 1 cup cottage cheese (any fat level works, but full-fat gives the best texture)
  • 1 cup rolled oats
  • 1 large egg
  • ¼ cup honey or maple syrup (your choice of natural sweetener)
  • 1 teaspoon vanilla extract
  • Zest of 1 large lemon (roughly 1 tablespoon)
  • ½ teaspoon baking powder
  • Pinch of salt
  • ¾ cup fresh or frozen blueberries (no need to thaw frozen ones)


Instructions

Step 1: Get things ready
Start by preheating your oven to 350°F (175°C). Lightly grease a mini muffin pan (24-cup size works best) so those little bites pop out clean later.

Step 2: Blend the base
Add the cottage cheese, oats, egg, honey, vanilla, lemon zest, baking powder, and salt into a blender or food processor. Give it a few quick pulses until everything’s combined and the oats look mostly smooth — kind of like a thick pancake batter.

Step 3: Add the blueberries
Pour the blended mixture into a mixing bowl and gently fold in the blueberries. Don’t stir too hard — you want to keep the berries whole so each bite has those juicy pops of flavor.

Step 4: Let it rest
Give the batter about 5 minutes to sit. This short rest helps the oats absorb moisture, giving your bites a better texture after baking.

Step 5: Fill the muffin tin
