FOR THE CRUST

  • Cooking spray
  • 12 graham crackers (from 2 sleeves, finely crushed (about 1 3/4 cups))
  • 3 tablespoons Domino Golden Sugar
  • 5 tablespoons unsalted butter (melted)
  • 1/4 teaspoon kosher salt

FOR THE FILLING

  • 16 ounces cream cheese (at room temperature)
  • 1/2 cup Domino Golden Sugar
  • 2 large eggs
  • 1 teaspoon finely grated lemon zest

FOR THE TOPPING

  • 3/4 cup all-purpose flour
  • 2 tablespoons packed Domino Dark Brown Sugar
  • 2 tablespoons Domino Golden Sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/4 cup unsalted butter (melted)
  • 1 1/2 cups fresh blueberries


Instructions

  1. Step 1: Preheat your oven to 350°F. Lightly grease a 9×9-inch baking pan with cooking spray and line the bottom with parchment paper, leaving a two-inch overhang on two opposite sides. Lightly spray the parchment paper with cooking spray.
  2. Step 2: Let’s start with the crust! In a medium bowl, mix together the crushed graham crackers, Domino Golden Sugar, melted butter, and salt until they resemble wet sand and hold together when pressed.
  3. Step 3: Press the crust mixture into the prepared baking pan in an even layer. Use the back of a spoon or a measuring cup to firmly pack it down. Bake until golden, which takes about 12 minutes. Allow it to cool on a wire rack for 10 minutes.
  4. Step 4: Now, onto the filling! In a large bowl, beat together the cream cheese, Domino Golden Sugar, eggs, and lemon zest until smooth. Set this mixture aside.
  5. Step 5: Time for the topping! In another bowl, whisk together the flour, Domino Dark Brown Sugar, Domino Golden Sugar, cinnamon, and salt. Add the melted butter and stir until you get a crumbly dough.
  6. Step 6: Spread the cream cheese filling over the slightly cooled crust. Sprinkle the blueberries evenly over the filling. Then, using your hands, crumble the topping evenly over the blueberries and filling.
  7. Step 7: Bake until the dessert is puffed and just set in the center, about 30 minutes. Let it cool completely on a wire rack, then refrigerate until well chilled, at least 1 more hour. Finally, slice it into squares and serve. Enjoy every delicious bite!
